Well, whaddya know, yesterday was National Pancake Day. Luckily I had a protein pancake for breakfast, but no no, it wasn’t enough.
So I made coconut protein pancakes for dinner.
They were amazing.
- 1 scoop perfect fit protein powder
- 2 egg whites
- 2 tbsp coconut oil
- 2 tbsp shredded coconut
- drizzle coconut milk to stir
Cook on medium-high heat, flipping once the top is bubbling. Sprinkle a little more shredded coconut and some honey on top & love it up. This recipe made 4 mini pancakes, about 3-4 inches in diameter. I am obsessed with coconut so I knew that when I was going to have pancakes for dinner that coconut was going to be involved. Esp since I got a fresh jar of coconut oil.
Good thing I worked my butt off before din so I was pretty hungry.
40 minutes on the StairMaster and some abs.
Apparently yesterday was Booty Tuesday. Between my morning and evening workouts I was hittin’ the glutes hard. And yes I feel it this morning!
I think today I’ll be taking a rest day…haven’t had one of those in a while! I need to do some V-day prep for tomorrow…Mike & I decided to have date night at home so I’m making what I hope will be a delicious dinner complete with festive Valentine’s Day decorations.
