Well, whaddya know, yesterday was National Pancake Day. Luckily I had a protein pancake for breakfast, but no no, it wasn’t enough.
So I made coconut protein pancakes for dinner.
They were amazing.

- 1 scoop perfect fit protein powder
- 2 egg whites
- 2 tbsp coconut oil
- 2 tbsp shredded coconut
- drizzle coconut milk to stir
Cook on medium-high heat, flipping once the top is bubbling. Sprinkle a little more shredded coconut and some honey on top & love it up. This recipe made 4 mini pancakes, about 3-4 inches in diameter. I am obsessed with coconut so I knew that when I was going to have pancakes for dinner that coconut was going to be involved. Esp since I got a fresh jar of coconut oil.
Good thing I worked my butt off before din so I was pretty hungry.
40 minutes on the StairMaster and some abs.

Apparently yesterday was Booty Tuesday. Between my morning and evening workouts I was hittin’ the glutes hard. And yes I feel it this morning!
I think today I’ll be taking a rest day…haven’t had one of those in a while! I need to do some V-day prep for tomorrow…Mike & I decided to have date night at home so I’m making what I hope will be a delicious dinner complete with festive Valentine’s Day decorations.

I’ve jumped on the stairmaster train lately and I’m loving it! Although I like to break it up a bit since I find it so darn boring! Cardio in general is boring when you’re in the gym…well for me anyway!
Gotta get that booty in shape for bikini season!

my boyfriend and I are valentines day haters haha, so we will be having dinner at home as well! The holiday is too hyped up for me!
I’m so impressed you can be on the stair master for 40 minutes! I can hardly do 15!
Staying in on Vday is sometimes more fun!! We did ours early because I’ll be skiing in Utah as of tomorrow
