Cocoa Chocolate Chip Protein Banana Bread (Mini!)

Like I mentioned earlier, I received my shipment of Perfect Fit Protein today and I felt like doing something creative with it.  Since we were out of power for a week, I definitely ate all of the banana bread I baked last weekend.  It was one of the few foods I had in the house that I could eat without having to cook it somehow. This time I felt like coming up with my own recipe and adding my own touches to it.  Those touches were protein and chocolate.  And that’s where today’s baking creation comes in…

The recipe is below.  The bread I made is gluten-free because the flour I used was Bob’s Red Mill Gluten-Free All Purpose flour.  You could easily replace with any flour you prefer.  I also used three mini loaf pans just for fun, but I believe the same recipe could be used for a full-size loaf pan.

My three mini-loafs yielded 18 slices total, making the calories roughly 70 calories per slice and 5.5 grams of protein per slice.  Not bad!

I LOVE the addition of cocoa powder for the extra chocolatey taste.  This bread is so good and definitely very filling because of the protein.

I believe it only comes in that flavor so yes and it’s good :)

I am so obsessed with the Tone It Up girls, they’re so inspiring! I haven’t tried their protein powder yet, but definitely want to. Do you find that baking with it gives the product a chalky texture? I’ve tried baking with a few powders before and found that they seemed a bit chalky :(

I know what you mean, but the perfect fit does not have that chalky taste at all. It’s by far the best protein I’ve ever baked with and it makes the BEST protein pancakes in my opinion :)
